Okra Croutons “Okratons”  Low-Carb Salad Topping

When I was a little kid, I could not stand okra. I couldn’t stand boiled, okra, fried okra, or any of it.

But just like the seasons of the gardens change… so did my tastebuds!!

I always love to come up with recipes that will satisfy the crunch without sabotaging good eating habits!!

These fried okra salad topping croutons are simply perfect warm or cool! So check out this recipe below and see what you think!

Ingredients:

  • 1 lb fresh okra, sliced into 1/2-inch pieces
  • 1 cup almond flour
  • 1/2 cup crushed croutons ( if carbs are no biggie)
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 large egg, beaten
  • Avocado oil for frying

Instructions:

  1. Prep the Coating …In a mixing bowl, combine almond flour, crushed croutons, garlic powder, smoked paprika, salt, and pepper.
  2. Dip the okra pieces in the beaten egg to coat.
  3. Toss the egg-coated okra in the almond flour mixture until fully coated.
  4. Heat about 1/4 inch of oil in a skillet over medium heat. Fry the okra in batches for about 2-3 minutes on each side, until golden brown and crispy.
  5. Transfer the fried okra to a paper towel-lined plate. Wait just a bit for cooling and then toss on your salad. YUM!!
