Winter Bounty: Kale Soup

Ingredients

~1 lb sausage (I use spicy italian but whatever works for you do it)
~1 onion, diced
Couple garlic cloves, minced
Potatoes, sliced finely into circles then cut in half
(or use a mix of red new potatoes and white yams–approximately 1.5 medium yams and 4-5 large red potatoes)
1.5 cups broth
1 can coconut milk
1 can coconut cream
splash of heavy whipping cream
salt, pepper, garlic powder, red pepper flakes (to taste)
parmesan reggiano or romano cheese for topping
Kale, 2 large bunches, stems removed, leaves cut or torn into bite-sized pieces 

Steps

  1. Brown sausage. Remove and drain.
  2. Add onion and garlic, saute.
  3. Add sausage back in.
  4. Add potatoes, chicken broth and coconut milk.
  5. Let simmer until potatoes are mostly fork tender; don’t over cook.
  6. Add kale. Wait a few minutes (2-3) to let it wilt. 
  7. Turn off heat. Add splash of cream (or any other extra liquid it needs) and seasonings.
  8. Ladle into bowl and top with cheese.
